This is our second time carrying one of the Crucero coffees from Ana Mustafa and her family. I'm excited for you guys to try it because it is just such a flavorful coffee. The interesting thing about the Crucero coffee is the nature of the washing process that incorporates depulped coffee over the course of three days to feed the fermentation process that removes the mucilage from the seed. These experiments with fermentation time allow unique full complex flavor and a little bit of booziness.
